Remove example notebooks

The moon-coverage example notebooks are now hosted independently of the core module in its own repository.

• Move the current notebooks from notebooks/ to the new repository.
• Update the main README.
• Update the documentation with the new setup.

Note: The content of the examples/ will be kept here because they are used for the Gallery of Examples in the docs.
