New documentation URL

Closes #27 (closed)

• Update all the files containing the old readthedocs.io endpoint.
• Update the badges in the repo with the new redirection URL

Note: The new canonical entry point is: moon-coverage.univ-nantes.fr but the old moon-coverage.readthedocs.io remains active.
